Fried Tiny Shrimp Served with Dry Pancakes

The Mekong delta, a large area in southern Vietnam, is where the Mekong River empties into the sea. Thanks to the alluvium of the Mekong River, this region has many food specialties.
Bored with fussy, complicated, greasy dishes? It’s time for you to sail along the Mekong River to explore many different dishes which are simple, light, but quite impressive! One of the most popular dishes is “Fried tiny shrimp with a dry pancake”.

Tiny shrimp are associated with the childhood of many people in the Mekong Delta. It is quite easy to find tiny shirmp right in the rivers and canals surrounding the villages.

Tiny shrimp is mixed with crispy flour.

Fry sliced onion to mix with tiny shrimp.

Tiny shrimp is served with  pieces of the dry pancake.

To make the dish, it is necessary to select fresh tiny shrimp, clean and let them dry for a while. Mix the shrimp with crispy flour and then fry them over a high heat.

Fry the chopped garlic and then mix with the fried shrimp. Add some fish sauce to finish the dish.

The dish is served with dry pancakes. The best way to eat it is to use pieces of the dry pancake as a spoon.
