Sweet and sour sturgeon .

Sturgeon is usually prepared in one of nine different ways, such as frying, grilling, added to a hot-pot and more, yet each method is mixed with different dressings and spices that create a distinctive flavour.

For the gilled sturgeon, the fish is mixed with some special spices and grilled over charcoal until it becomes brown. The dish is served with rice vermicelli, basil and fish sauce mixed with red pepper. Sturgeon hot-pot is also very popular thanks to the fact that this method tenderizes the meat and the sweet and sour broth is delicious. The sauced sturgeon is soft and salty, suitable to be served with rice.
