Sturgeon is raised successfully in the provinces of
Sa Pa, Kon Tum and Binh Thuan in
Vietnam
. The tough,
white meat of this fish has a sweet and slightly greasy taste.

Sturgeon is usually prepared in
one of nine different ways, such as frying, grilling, added to a hot-pot
and more, yet each method is mixed with different dressings and spices
that create a distinctive flavour.
For the
gilled sturgeon, the fish is mixed with some special spices and grilled
over charcoal until it becomes brown. The dish is served with rice
vermicelli, basil and fish sauce mixed with red pepper. Sturgeon hot-pot
is also very popular thanks to the fact that this method tenderizes the
meat and the sweet and sour broth is delicious. The sauced sturgeon is
soft and salty, suitable to be served with rice.

1.5kg
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; White wine:
100g
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Red pepper,
seasoning, salt, dried onion, garlic, oyster oil, sesame oil, cooking oil,
pineapple, star-fruit, ginger, green banana, salad and basil
Preparation:
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Clean the fish,
cut it into large pieces and then slightly cut on the surface of each
piece.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Grind dried
onion, garlic and red pepper and mix with salt, oyster oil, sesame oil and
cooking oil.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Grind the ginger
and mix with the white wine and squeeze for its juice.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Marinate the fish
in this mixture for 15 minutes and grill over charcoal until they become
brown.
