Carp Simmered in Earthen Pot

Ingredients: (serves 4)
- Carp or black carp: 1kgnbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;- Dried onion: 40grnbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;- Pig fat: 200gr
- Dried garlic, red pepper, fish sauce, seasoning, sugar, nbsp;pepper and caramel sauce

Preparation:
- Clean and cut the fish into pieces. Select the middle piece for simmering.
- Thinly chop dried garlic, onion and red pepper.
- Cut up the pig fat into tiny cubes.
-nbsp;Mix the fish with half of the prepared dried garlic, onion, sugar and caramel sauce and let stand for 15 minutes.
- Boil the fat, sugar, caramel sauce, fish sauce, chopped dried garlic, onion, red pepper and a small bowl of water in an earthen pot.
- When the mixture boils, put the fish in and cook over low heat until the fish is tender and the mixture becomes pasty.
- Served hot with rice.
