Banh khot
(Vietnamese mini savoury pancake), one of the delicious dishes of the
people from southern
Vietnam
, is a
favourite of both domestic and foreign visitors. It is made mainly from
rice and fresh shrimp and served with sweet and sour sauce and
vegetables.
Ingredients:(serves
5)
- Rice:
1kg; soy-bean: 100g; fresh shrimp: 0.7kg; salted ground shrimp; cooking
oil, fish sauce, salt, sugar, dried onion, lotus stem, papaya, salad, fish
mint, perilla and sweet basil.
Preparation:
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Wash the rice and
soy-beans and soak them in water overnight. Grind the rice and soy-beans
with water, add a dash of salt.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Peel the fresh
shrimp and mix with a dash of seasoning.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Make the salted
ground shrimp: Submerge the dried shrimp in boiled water, grind and dry
them.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Slice dried onion
and then fry them with cooking oil until they become brown.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Make the sauce:
mix one spoon of fish sauce with 3 spoons of water and a dash of sugar,
add vinegar to taste.
-nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp;nbsp; Make the
pancakes: Put some moulds over high heat and add cooking oil. When the
cooking oil is boiling, put ½ bowl of batter in every mould and then add
shrimp. Cover the moulds and cook until the two sides of pancakes become
light brown. Add the salted ground shrimp and sliced spring onion. Put the
pancakes on plate.

sweet and sour sauce and pickled lotus stem, papaya and salad and
mints.
