Ca Duoi Grilled with Green Chilli & Salt

Ca duoi (Batoidea) is considered a speciality in the coastal city of Da Nang. Anyone who once tastes the dish will never forget its deliciousness.
This species of fish lives mainly in deep water and  in the sea of Central Vietnam. To adapt to the living environment, Ca duoi has a thin body with a cartilage structure.

It is very simple to cook the dish. Ca duoi is cleaned and grilled over charcoal for a short time to make it dry. Marinate the fish with chopped green chili, green onion, basil, garlic, pepper, salt and oil for  20 minutes. Grill the fish until it becomes brown.

Roll a piece of fish with basil, sliced cucumber, pineapple and green banana in rice paper and serve with  green chili sauce.
