Known as banh trang dap or banh dap dap, this dish is tied to the history and traditions of Hoi An. It was initially enjoyed by locals as a way to alternate from daily meat and fish dishes, gradually becoming a local specialty. 


At first glance, banh dap appears simple and not overly complicated to prepare. However, it offers an unforgettable taste, with a unique way of eating and a visually appealing look. For people from Central Vietnam, banh uot (steamed thin rice pancakes) made from rice flour is very familiar. Banh dap is also made from this rice paper, with a twist: while banh uot is still warm, a thin crispy rice cracker is added on top, then folded and enjoyed.

The delicious flavor of Quang Nam’s banh dap comes largely from its dipping sauce, made with mam nem (Vietnamese fermented fish sauce), crispy fried shallots and anchovies. The people of Hoi An have a distinctive way of preparing the sauce, making it both rich and refreshing, with a hint of chili for a spicy kick. Banh dap in Hoi An is often paired with stir-fried mussels, boiled pork, and fresh herbs.
