Hai Phong Crab Spring Roll

Spring rolls are a traditional dish at family mealtime and parties of Vietnamese people. However, the dish is made differently depending on the region. For example, in Hai Phong spring rolls are made with crab meat.

 Ingredients:

-         Sea-crab with roe: 0.6-0.8kg
-         Fragrant mushroom, wood ear fungus, pork mince, spring onions, cassava vermicelli, bean sprouts, chicken egg yolk, rice paper, seasoning and pepper.
 
 Preparation:
-         Steam the crab and remove the meat.
-         Clean the fragrant mushroom, wood ear fungus, spring onions and cassava vermicelli and chop thinly. Mix with crab meat and pork mince, chicken egg yolk, seasoning and pepper.
-         Spread the rice paper and put two large table spoons of the mixture on top and then form into a roll or 4cm x 4cm square piece.
-          Heat the cooking oil and put the square pieces in and fry until they become brown.
