Beef is rich in protein with a low fat content. It is prepared in different ways, such as beef fried with garlic cloves and celery, beef fried with red peppers and lemongrass, beef cooked with ginger, beef grilled with lemon leaves or beef noodle soup. The Vietnamese people also combine beef with red wine and some spices to many tasty dishes imbued with both Vietnamese and Western flavours. One of them is beef stewed in red wine.
To make this delicious dish, it is necessary to select beef fillet with tendons so that when the dish is well done, the meat becomes tender and the tendons crunchy. Besides red wine, it needs some Vietnamese traditional spices, including star anise and cinnamon. The dish will have the taste of red wine and spices, satisfying any food connoisseur.

Ingredients:
- Beef, garlic, onion, dried onion, star anise, cinnamon, tomato, pepper, salt, fish sauce, arrowroot powder, 2 cups of red wine and coriander.
Preparation:
- Clean and cut the beef into cubes.
- Combine the beef with crushed dried garlic, onion, star anise, cinnamon, fish sauce, salt and red wine in a bowl. To make the beef soft, mix it with a dash of arrowroot powder.
- Stir the beef for 4-6 minutes and then pour water over it. Cover the pot and simmer over a low heat until the beef is tender. Add tomato and onion wedges.
- Mix a dash of arrowroot powder with cold water and pour the mixture into the pot, helping the dish slightly thicken. Lastly, add a little day-lily powder to give the dish colour.
- Ladle the beef and its gravy into a large bowl and decorate with coriander. Sprinkle with pepper.
- Serve hot with rice or toast.
